The North Ellis County Outreach Center in Red Oak, Texas, requested help from the Ovilla Garden Club to plan, organize, and initiate a Victory Garden on the premises of the center to provide fresh, nutritious fruit, herbs, and vegetables to the needy citizens of the area. The Outreach Center has approximately three acres of vacant land on their property that is fenced and has water access. The Outreach Center is very excited about having plentiful fresh vegetables to distribute to their clients, especially as donations have dwindled and the number of families seeking help has increased. The main goal for the Victory Garden is to produce high quality, nutritious food in generous quantities for the Outreach Center. Vegetables easily grown in this zone that will take the Texas heat include tomatoes, onions, herbs, potatoes, okra, eggplant, squash, beans, peas, cabbage, broccoli, sweet potatoes, radish, carrots, beets, lettuce, peppers, cucumber, and melons. Later in the year we would like to plant fruit trees, including peach, plum, and pear. Many local businesses have offered to supply both plants and seeds for the garden.
The goal for this year is to establish raised beds and container gardens filled with high quality soil, to create an effective watering system, and to plant a wide variety of vegetables to be harvested and distributed by the North Ellis County Outreach Center. Once these basic goals are met, then we can begin to till the soil to increase our planting area. In the future, fruit trees will be planted, rainwater will be collected, and a shady picnic area created.
